Having a pig roast is hands down one of my favorite things to do. There are few other edible, legal party activities that put everyone in a good mood and garner as much excitement as serving moist delicious roasted pork to a large group of friends does. As a very gross estimate, roasting a pig takes approximately one day of prep, and one day of actual roasting. To be clear - I am no expert on pig roasting, but then again, few are. I am simply passionate about the subject and have done it a number of times. I have welded my own spits out of steel and also rented motorized spits from party rental supply stores. I have roasted one pig all by itself, two pigs together, two pigs with a bunch of chickens and some multi-headed ducks with chickens.

The most common way that people cook whole animals today is to BBQ it as opposed to roasting it. This is an easier approach, since cooking it at a lower temperature makes it easier to cook evenly. The cooking devices commonly used are a box smoker, large drum smoker, or simply digging a pit. You can also build a pit out of cinder blocks. I generally cook whole lambs on an iron cross propped up next to a campfire see the cookbook Seven Fires by Francis Mallmann for that method. However, I do roast pigs on a spit every now and then. All of that said, you absolutely can cook lamb on a spit! Also buy a length of pipe that is one size up from your spit make sure the spit can slide into it. Another way to attach the animal to the spit is to buy steel wire, drill holes in the pipe, and wire the carcass to the spit. You can run the wire through the carcass on either side of the spine and directly wire the spine to the spit, this locks it on very well.
